Cactus Salad (Ensalada de Nopales)

This refreshing and colorful side pairs great with any Thanksgiving turkey or holiday feast. The nopales (cactus) bring both flavor and a healthy source of fiber, Vitamins A & C, Magnesium, Calcium, and Manganese!

Cactus Salad (Ensalada de Nopales)

This refreshing and colorful side pairs great with any Thanksgiving turkey or holiday feast. The nopales (cactus) bring both flavor and a healthy source of fiber, Vitamins A & C, Magnesium, Calcium, and Manganese!

 

 

Ingredients:

  • One 30oz jar of Nopalitos (tender cactus)– Doña María brand, drained and rinsed
  • 4 medium tomatos
  • bunches of cilantro
  • 1 medium onion
  • medium avocados
  • Juice of 2 Limes
  • Salt to taste
  • 6-10 oz Queso fresco (such as Cacique Ranchero Part Skim Milk Cheese)

Instructions:

  1. Finely dice the nopales, tomato, cilantro, onion, and avocado and mix in a large mixing bowl.
  2. Add lime and salt to taste.
  3. Top with queso fresco cheese and enjoy!
