Cozy up with a warm bowl of homemade rice pudding J This recipe uses brown rice to provide a little extra fiber. Add raisins, nut butter, or an alternative milk option for additional nutrition!
Serves 6-8
Ingredients:
- 1 cup long grain brown rice
- 2 standard cinnamon sticks
- 4 cups water
- 1 egg
- 3 cups soy milk
- 1 (12 ounce) can sweetened condensed milk
- ¼ tsp salt
- 1 tbsp vanilla
Tips & Notes
- Use any type of milk that you prefer
- Add 1 extra cup of milk + 3 tablespoons maple syrup, and exclude sweetened condensed milk for a healthy alternative
- Mix nut butter (peanut butter, almond butter) with serving to add extra protein
- Add ½ cup raisins for additional vitamins and fiber
- Sprinkle cinnamon on top
Instructions:
- Soak rice and cinnamon sticks in 4 cups water in large pot for 1 hour
- After soaking, bring rice to a boil on high heat, uncovered
- Once boiling, lower heat to medium and cook for 10-12 minutes or until water is evaporated
- Beat egg in large bowl, add the milk, stir
- Add egg mixture, condensed milk, salt, vanilla extract, and raisins (optional) to rice. Cook over medium-low heat. Stir slowly until thickens for 15-35 minutes
- Remove cinnamon sticks
- Let cool uncovered, chill in fridge
