Cozy up with a warm bowl of homemade rice pudding J This recipe uses brown rice to provide a little extra fiber. Add raisins, nut butter, or an alternative milk option for additional nutrition!

Serves 6-8

Ingredients:

  • 1 cup long grain brown rice
  • 2 standard cinnamon sticks
  • 4 cups water
  • 1 egg
  • 3 cups soy milk
  • 1 (12 ounce) can sweetened condensed milk
  • ¼ tsp salt
  • 1 tbsp vanilla

Tips & Notes

  • Use any type of milk that you prefer
  • Add 1 extra cup of milk + 3 tablespoons maple syrup, and exclude sweetened condensed milk for a healthy alternative
  • Mix nut butter (peanut butter, almond butter) with serving to add extra protein
  • Add ½ cup raisins for additional vitamins and fiber
  • Sprinkle cinnamon on top

Instructions:

  1. Soak rice and cinnamon sticks in 4 cups water in large pot for 1 hour
  2. After soaking, bring rice to a boil on high heat, uncovered
  3. Once boiling, lower heat to medium and cook for 10-12 minutes or until water is evaporated
  4. Beat egg in large bowl, add the milk, stir
  5. Add egg mixture, condensed milk, salt, vanilla extract, and raisins (optional) to rice. Cook over medium-low heat. Stir slowly until thickens for 15-35 minutes
  6. Remove cinnamon sticks
  7. Let cool uncovered, chill in fridge
